Today I begin a new chapter in my professional life. I a 33 year old chef working in a hotel kitchen, with a passion for all things food & drink.
This is the first installment and an introduction to my blog. What it will contain, I still do not know for sure. I will bring you through my food journey, literally and visually.
I would love for you to request a blog that i could then research, photograph and share.
I will start with a picture of my favourite seed of the moment, growing into one of my least favourite herbs!? Not that i dislike this herb, but there are far better herbs out there, for me anyway!
The coriander seeds that i use at the moment are purchased from Green Saffron in Cork. When crushed with a pestle and mortar the release the most beautiful orange blossom bouquet. This seed is best used when crushed just before using and is a great flavour compliment with roast potatoes, fresh tomato sauce and when used to season whole roast chicken or fresh sea bass.
